Breads: Somersault Cranberry Puffs
Fruity soft cranberry muffins
Serves: makes 18 puffs
Ingredients
1/3 cup firmly packed light brown sugar¼ cup margarine, softened
½ cup fresh or frozen cranberries, thawed and coarsely chopped
1 tsp. grated orange rind
½ cup chopped nuts
1 ½ cup unbleached all
purpose flour
1 cup light buckwheat flour
½ cup granulated sugar
1 Tbsp. baking powder
½ tsp. salt
¼ cup fresh orange juice
1 cup milk
1/3 cup margarine melted
2 eggs whites, or 1 whole egg
